The Guarano is crafted from 100% Negroamaro grapes. Using the appassimento method, the berries are left on the vine to dehydrate until they resemble raisins, then harvested by hand in the first ten days of October. This late picking yields concentrated must, resulting in a full-bodied wine with impressive depth and structure.
